V, gracefully accepted my request to share a recipe and made a fun and interesting dish for me last night. Falafel sliders with Avocado Hummus and Creamy Tahini. Sounds great, no?! Let’s get started. Bear with me, it’s a lengthy post, but totally worth it.

What you need for sliders:
2 cans of chickpeas
2 chopped onions
Handful of chopped fresh mint
Handful of chopped fresh coriander
2 spoons of besan (gram flour)
1 tablespoon each of coriander and cumin powder
Salt if needed
2 or 3 sundried tomatoes
Oil for shallow fry
Slider buns

What you need for Creamy Tahini
3-4 spoons of Tahini
1 small splash of water
Salt to taste
1 clove of garlic
Juice of 1 big lime

What you need for Avocado Hummus
2 avocados chopped
1 clove of garlic
1 tablespoon chickpeas
Juice of 2 lemons
Salt and chilli powder

Let’s cook:
Step 1: Add all the ingredients in a blender or food processor and roughly grind them. You should be able to easily form a patty. Grease your palm and make small patties.
Step 2: In a hot pan add oil, and shallow fry the patties. Set aside.

Creamy Tahini.
Blend all the items mentioned above and whiz it into a nice smooth paste. Done!

Avocado Hummus:
Add all the things listed above in a blender and make a smooth paste.
Check for seasoning and set aside.

Let’s assemble the avengers!

With a Hawkeye like precision, make two half’s of your slider buns. Spread a spoonful of The Hulk’s personal favorite Avocado hummus on the bottom half. Salad is what Black Widow eats to stay in shape (true story), add a lettuce leaf (or spinach or rocket if you fancy)and a tomato. Gently place your patty and an onion on top of it. Add a spoonful of that gorgeous creamy tahini that’s as gorgeous as the Demi God Thor. Close it with the other half of the slider. Voila!

Since there was no cream, milk or butter used, it qualifies as a Vegan recipe.

Happy cooking you all. Have a great weekend. Don’t forget to tell Vyshnavi what you felt about this recipe. Here’s hoping she will contribute more healthy recipes in future šŸ™‚
