Back to blogging after a really long time. So far, I’ve only been picture blogging (as if that’s a thing?!) on my Instagram and FB page. A lot of you asked me for this recipe. So here goes..
I had a couple of over-ripe bananas at home the other day. I don’t fancy making pancakes, or add them to my cereal. So the only recipe I could think of is putting it in a loaf. Please, feel free to call it a cake/bread. So my 8yo and I simply decided to bake.
Here’s what you need
2 over-ripe bananas
140g Softened butter
140g Plain/ self-raising flour (I used plain)
1 tsp baking powder
1 tsp Vanilla essence
Handful of chocolate chips
Step 1 – Pre heat the oven to 180 degrees
Step 2 – Whisk away the smooth butter along with the sugar. Beat them together till the sugar blends in well with the butter
Step 3 – Mash them bananas and add 2 eggs and mix. Add Vanilla essence at this stage
Step 4 – Add the butter sugar to the banana and mix well.
Step 5 – Fold in the flour and baking powder. Make sure there are no lumps in the batter. Add chocolate chips and fold.
Step 6 – Grease a tin pan (actually any baking dish you are using) with butter and pour the batter.
Step 7 – Chuck it in the oven for 30 minutes, make yourself a nice cup of coffee and chill. After 30 minutes, take the pan out of the oven and let it rest for another 10 minutes before you cut into the loaf. Add some powdered sugar for extra goodness (and great looking Instagram pictures 😉
Enjoy the buttery,sugary loaf with coffee/tea. TBH my daughter loved it so much she brought it to the playground to share it with her friends. Needless to say, The Husband and I got only a piece each.
